Tera lists her meal plan for the week on her blog and I like to get inspired or steal recipes from her if I have the necessary ingredients. Here is my meal plan this week: Mine aren’t listed in order since I choose which meal I’m going to make on which day according to the level of difficulty and my energy level.
Huevos Rancheros – (Ashley L. made this for us on V-day and it is delicious. Thanks Ashley!)
Salmon Patties with Creamy Dill Sauce (My recipe is a variation of this one, I think I’d leave out the heart smart mix and butter all together in this one)
Lentil Ricotta Stuffed Manicotti (The recipe is for meatballs but the texture is too mushy for us as meatballs but perfect for stuffing into pasta)
Skillet Chicken with Corn on the Cob and Mashed Potatoes
Calzones Stuffed with Ricotta, Mozzarella, Spinach, Sun-Dried Tomatoes, Red Onions and Garlic (Thanks for the inspiration Erin. I use an Italian pizza dough recipe that is really easy. It just has to be made the night before. Let me know if you would like the recipe)

Side Note: Leafy greens for a salad accompany every meal unless it would be a strange pairing. Mm gobbles his down as if he were taking his medicine for the day.
